I have become a fan of the vegetarian lunch.
Today's version: Tomato & Garbanzo Salad
Prep time: 30 seconds
Ingredients:
Two warm, ripe tomatoes (ie. not directly from the fridge)
1/3 can garbanzo beans, drained
Small wodge of French feta, crumbled
Small handful basil or mint leaves, chopped roughly
Drizzle of good olive oil
Squirt of lemon juice
Salt & pepper
Method:
Combine ingredients in a nice white bowl.
Feast.
This is a variation on what I eat when I'm alone, at my desk. My friend Eddie likes to feast on green apples and peanut butter, a delicious snack, but my main lunch criteria is that a fork has to be involved.
