An easy vegetarian stew for an autumn night
Last night, mostly because I was too grumpy to go to the market & Minky was home sick and of malodorous humor & I was sick of hearing the Obama/Marxist sh*t, & I was missing my son and the east coast, I made a vegetarian Moroccan stew with some carrots & a sweet potato I found in the fridge. I adapted a recipe from Bon Appetit which you can find here. Although it calls for winter squash, almost any root vegetable would do and it's incredibly easy. The most delicious part is the quinoa which is made almost as a pilaf, with some finely chopped onion and carrot. The whole thing is topped off with chopped mint and cilantro.
