The humble-bumble aubergine

I cannot sign off for the weekend without a hat tip to my favorite autumn vegetable, the humble aubergine, or eggplant as I've come to know him. Versatile, meaty, smooth and delicious, is there a more sexy or versatile berry? He truly is the  George Clooney of fall vegetables and a member of the nightshade family (along with tomatoes and potatoes). Thank you for reminding me of the sexy aubergine - Sadly, my husband is allergic - One bite would certainly kill him - Hummmmm????

Our local farm markets are filled to the brim with lovely fall veggies, including the aubergine. They even have the small asian ones which I just love to cook with. I have a great Indian recipe which I'll post the next time I make it.

Youngest child just complained that my cooking was becoming ordinary and asked for something "different". Next weekend could see him eating a lot of egglant!!! xoxo
