Be-ribboned courgette

I know, it should be the title of a poem.

This is a simple, delicious salad, enough for 2:

one zucchini (courgette)
one good squeeze of lemon
one glug of olive oil
one half handful of walnuts, chopped roughly
a sprinkle of salt
a screw of pepper
some shaved parmesan

using a potato peeler, shave long ribbons of zucchini into a pretty bowl
add the other ingredients
mix gently and serve
