January Jeliciousness: Cousin Stan's Breakfast for Champions

Øystein is my favorite cousin. Hands down. He's in Norway in the summer when we're there, with his dog, Bajas, and he cooks brilliant barbecues after long days cruising around the Oslo fjord.  We also shared a most amusing evening in London at the "Prometheus" premiere where he managed to charm the delightful Noomi Rapace and soon they were chatting like an old married couple. He shares with us here his slightly unorthodox but most definitely delicious Breakfast for Champions (sic.) -- MsW

Cousin Stan’s Breakfast for Champions

2 slices of loaf (*I was going to change this to bread but loff is the Norwegian word for that lovely white bread, so I'm leaving it this way--MsW)
4 slices of bacon (or cooked ham)
4 slices of Jarlsberg cheese (or any white cheese)
2 eggs
1/2 cup milk
4 tsp of sugar
1 tsp cinnamon
1 tsp cardamom
maple syrup

Fry the bacon in a pan.

Beat together in a bowl the eggs, milk, sugar, cinnamon and cardamom.

Put the slices of loaf on a deep plate, pour the Egg/milk mix over. Let the slices of loaf soak up the mix.

Start frying one piece of loaf in the pan, using a sufficient amount of butter. When the 1st one is done one one side, turn it and put in the 2nd slice. When the 1st one is done on both sides and the 2nd on one side, turn the second one in the pan. Put on 2 slices of cheese, the fries bacon and 2 slices on cheese on top. Put the first slice of loaf on top. Put on a lid to make the cheese melt faster.

Served with maple syrup and a sprinkle of powdered sugar.
