This is from my friend Carol who is one of those hard-working execs who always seems to have time to do clever & creative things with her seriously adorable children. What a good idea:
EASY BREAKFAST
Lightly toast a thick slice of bread.
Use a cookie cutter to remove a shape in the center (picture attached is a heart)
Place the toasted, hollowed-out slice in a greased pan on high heat.
Crack a raw egg in the middle, cook to your liking.
Sprinkle coarse salt and pepper.
Herbs optional.
Carol says: "My children love these. I change shapes to match the season (Christmas Tree, bunny for Easter, etc)"

My grandmother used to make this for me. She called it 'toad in the hole'.
This dish has so many different names including Moonover Miami and One Eyed Jack. It is delicious and I always feel better after eating it. I butter the bread/toast and usually flip over to finish cooking.
