After lunch two days in a row at the addictive Cafe Gratitude, I was craving quinoa & kale and found this delicious recipe on Food 52 (click on the lime green link above). I didn't have scallions and substituted chives and half a minced shallot. Also, I'm not the biggest goat cheese fan, so I used feta. The warm lemony & cheesy mixture, with the crunch of pine nuts and the green specks of chive is quite divinely addictive and a good way to serve up a whole protein without using meat. And did I mention that it takes all of 15 minutes to cook?
