Easy vegetarian lunch

Quinoa, tomato, garbanzo & roast Jerusalem artichoke salad with
chopped parsley, toasted pine nuts, lemon juice & olive oil.

Where does one even find Quinoa? I never even heard of it until I went to Hugo's one day. Now I love saying that word.

I say Keen-Wah but some of my more British friends say key-noah. You can find it at bigger Ralphs, Whole Foods, Fresh n Easy or online. Believe it or not, you can actually buy it through Amazon. Good luck!

I made this salad for lunch just now and it was delicious. I was looking for a Quinoa recipe; J said you are the "Queen of Quinoa" and she was right. i'd never had sunchokes before, but am now hooked. Thank you! :)

One question: my quinoa looks somehow much blonder. Did you cook it in broth?

Worry not - I used red quinoa for that recipe. Either is fine. Ned tells me there is blue and brown quinoa also1
